Il Postino already changing direction

I spoke with Il Postino GM Raphael Sassower last night for an update on the new eatery.

Despite being dressed to please, Il Postino is admittedly going through some growing pains at the moment. That they are at least straightforward about that fact is respectable.

In particular, he wanted to direct my attention (and yours) to a note dated Dec. 28 on the outfit's Facebook page, which says:

Il Postino wishes all its guests, past, present, and future, a Happy New Year! We promise to improve our "delivery" in 2011 and gain your confidence and good will by making all the nessesary changes in our kitchen.

Well, the "changes in our kitchen" start with the letting go of chef Jeff Gebott, who Sassower speaks highly of, but essentially says wasn't quite the right fit for the restaurant and its direction.

Sassower is currently working with the line cooks to execute the menu, with which he's constantly been tinkering along with the help of customer input (both positive and negative). The UCCS professor even hops back from floor duty to man the line himself during rush periods, he says.

As for where Il Postino goes from here, Sassower says he's already got a new chef in line to take up the leadership position, but he's not quite ready for us to reveal who that person is as the deal is still being finalized.
