Food & Drink UPDATE: Springs gets its first cupcake truck

So the Springs Cupcake Truck folks were kind enough to drop us a small sample yesterday.
Overall impression: YUM!

- We've got the pistachio made with amaretto butter cream; Zippy Lemon made of lemon cake, lemon curd and cream cheese frosting; Rockin' Red Velvet, a Southern-style red velvet cake with cream cheese frosting; and Chocolate Overload, chocolate cake, frosting and chips.

- Yeah — I put 'em in the sunlight for a more dramatic photo. Thoughts on the red velvet: true to the classic and loaded with frosting. Sugar tooths will probably love the sparkling sugar top — to me, it's almost overload. Thoughts on the chocolate cupcake: Three forms of chocolate = awesome.

- A look inside: Note the ample butter cream frosting. Pistachio has always been my favorite gelato flavor, so this one's a no-brainer. The lemon might be my favorite of the batch because of the bright lemon curd touch. That, I wasn't expecting.

So Portland is known for its food cart scene.
L.A. for its Korean BBQ trucks.
Colorado Springs does sport a respectable amount of Mexican taco trucks, and now it's about to get its first cupcake truck.

In brief, it's coming to us via owner/chef Pat Kennelly of the Mediterranean Cafe downtown. Kennelly's niece, Denon Moore, runs The Denver Cupcake Truck as an extension of her and her husband's business, Cake Crumbs Bakery.
As an indicator of how successful this venture could be for Kennelly, she says the Denver outfit currently enjoys more than 8,000 Facebook fans.
