Le Bistro's chef departs for Taos

Just received a note from former Le Bistro owner/chef Henri Chaperont, who says he's just taken a job in Taos, N.M., as the chef at El Monte Sagrado Resort Spa.

Here's a brief description of the outfit as it stands prior to his arrival:

We wish Chaperont the best of luck in his new endeavor.

I'm personally sad to see him go. In the course of doing food reviews for the past several years, I rank Le Bistro (and La Petite Maison under Chaperont prior to that) as one of the better restaurants we had and currently have in town.

His French technique was quite proficient and the patio dining on Colorado Avenue was lovely, not to mention Chaperont served me one of my favorite dishes in 2010.
