More news from the hunger front

If you read my food stamp challenge article this week, then you may already be thinking about how difficult it can be to eat healthy on a small amount of money.

Luckily, there are some resources available. In my article, I mention the recipes and recommendations on the federal food assistance site at fns.usda.gov/snap. The local food assistance office also sent me some useful information on classes available for food-stamp recipients through the Colorado State University extension office. You can access all the information on those classes here.

I also have a couple more suggestions for you, if you're interested in the struggle to eat on a budget, and to do it the right way. Check out this recent editorial in the New York Times that calls for schools to bring back real home economics courses that teach kids about nutrition and cooking.
