Which makes the impending opening of Greenhorn Brewing Company all the more exciting and welcomed.
Proprietor/brewer Matthew Green says he and his wife Beth hope to be open at 505 N. Union Blvd. sometime in December, pending all the necessary paperwork. The couple is currently finishing demo on the space and starting the build-out of a humble 250-square-foot tasting room.
Matthew, 33, volunteer-apprenticed under Kevin Baity of Kevin Baity Kraft Beer over the past year, having home-brewed previously.
I'll tell you more in next week's Side Dish column, but for now will share a few of Matthew's favorite beer styles and one plan for his service style.
He's a big fan of stouts — his raspberry cream stout in particular — IPAs and pale ales and Bavarian-style wheat beers.
And he aims to have a Friday cask release weekly of cask-conditioned, high-ABV brews such as double IPAs.
