Act soon to attend rare Trinity Brewing Red Swingline dinner

At the turn of 2014, Draft Magazine named Trinity Brewing Company's Red Swingline to its list of top 25 beers of 2013, with the following description:

This 4.1%-ABV session IPA is everything we love about boundary-pushing beer. Brewed with coriander and tangerine zest; aged in French oak barrels with souring Lacto- bacillus bacteria and funky Brettanomyces yeast; and, finally, dry-hopped, the beer was this year’s wow moment. Grapefruit, tangerine and herbal, dank barnyard flanks playful tartness, while oaky tannins and hoppy bitterness lend an arid finish. It’s odd but amazing.
And just yesterday, the publication followed up with this posting, "Trinity's new IPAs are must-tries." 

In that posting, founder/brewer Jason Yester details six Red Swingline variations whose progressive releases will act as an educational series leading up to a blowout 6 course 6th Anniversary Dinner featuring a horizontal pairing of 6 new Swingline Variations

From Yester's monthly newsletter:
Starting on July 25th and for the following 5 Fridays leading up to our anniversary in August, we have extremely limited releases of each version scheduled. At the pub only 180 375ml bottles of each interpretation will be sold (limit 6 bottles each friday per customer), along with very small allocations to our favorite bottle shops and tap houses in the Front Range and a few choice locations in Portland. We anticipate fast 'sell through' on all of these bottles, and encourage showing up early if you plan to cellar or collect the full vertical line-up.

As for the celebration dinner, the date on that is Sunday, Aug. 24, 8 p.m.; seats are $75 and only 20 will be sold, beginning Monday, July 21.

Apéritif

Welcoming beer, Super Juice Solution

Amuse Bouche
Session Swing with Cucumber prawn cocktail.
Cilantro, mango. Garnished with red pepper flake and sweet corn shoots.

Hors D’oeuvres
Red Swingline and Ahi Tuna tartare.
Seasoned with Togarashi, Swingline pickled Cucumber, Avocado and Micro greens. Garnished with Tobikko and Sweet Soy reduction

Small Plate
Easy Swinger accompanying Carpaccio
Baby Beets with wild Boulder Mushrooms. Shaved Black Summer Truffle, Sauté wild Boulder Mushrooms and Stilton. Garnished with Micro Arugula and a citrus vinaigrette.

Entrée
Swing Pliser with Macadamia nut crusted Salmon.
Candied Pineapple with Green Apple, Fennel and
Asparagus slaw.
Sweet Raspberry and Red Chili White Balsamic reduction

Main Course
Double Swingline paired with Tataki of Wagu Striploin.
House made Ponzu sauce with Blood Orange and Guava. Shredded Pork with Cilantro and Scallion, Hoisin and Sesame Seeds. Garnished with crispy Rice Noodles.

Sweet
Passion Swing and Dessert Caramel, Banana Panna Cotta. Passion Fruit and White chocolate garnished with candied cereal and caramel sauce.

BEERS:

Super Juice Solution, Session Sour IPA. Hot fermented with Lactobacillus delbrueckii and complimented with heavily fruity American hops. We use a touch of coriander to reinforce the citrus theme of this beer. Although no fruit is used, this specialty IPA structure drinks refreshingly juicy and extremely session-able. 4.1% ABV 65 IBU's.

Session Swing, American Session IPA. Our Swingline Recipe brewed free of any wild microbes and fermented only on stainless steel fermenting vessels and dry hopped. 4.1% ABV; pH 5.4; 100 IBUs; rare.

Red Swingline, IPA Primitif. DRAFT Magazine's Top 25 Beers in the World for 2013! A wild and sour session IPA. Brewed with three heavily fruity hops, coriander, and tangerine zest the profile is definitely American in focus. Aged in French Oak Chardonnay barrels with souring Lactobacillus, funky Brettanomyces yeast, and dry-hopped in each individual barrel. This beer is a definite wow moment. 4.1% ABV; pH 3.6; 100 IBUs; rare.

Easy Swinger, Wild IPA. Our Swingline Recipe brewed only with Brettanomyces (no Lactobacillus). Aged on individually dry hopped French Oak Chardonnay Barrels. 4.1% ABV; pH 5.2; 100 IBUs; extremely rare.

Swing Se Pliser, Sour IPA. A Swingline Recipe variation brewed only with Lactobacillus (no Brettanomyces). Aged on individually dry hopped French Oak Chardonnay Barrels. 4.1% ABV; pH 3.0; 100 IBUs; extremely rare.

Double Swingline, DIPA Primitif. A Double 'Red Swingline' brewed with three heavily fruity hops, coriander, and tangerine zest the profile is definitely American in focus. Aged in French Oak Chardonnay barrels with souring Lactobacillus, funky Brettanomyces yeast, and dry-hopped in each individual barrel. 8.2% ABV; pH 3.6; 150 IBUs; extremely rare.

Passion Swing, American Fruited IPA. Our Swingline Recipe brewed free of any wild microbes, fermented only on stainless steel fermenting vessels, and aged on Passion Fruit. 4.1% ABV; pH 5.2; 100 IBUs; extremely rare.
