Sad, but not surprised to see another institution of an independent restaurant go down. It is impossible for an operator of a one restaurant like Steaksmith to compete against a big chain like Texas Roadhouse. Particularly on price. Big chains can negotiate considerably better pricing on the meat they buy and have contracts in place that will protect them from rising meat costs due to drought.
Tejon Tech, you're right about Chinook, I always felt like I was disturbing their quiet time when I tried to shop there.
