Good Juju Ice Cream with Sweet Fig Balsamic

For ice cream:

2 c. heavy cream

1½ c. half & half

8 large egg yolks

1 c. Left Hand Brewing Co. Good Juju ginger beer

1 c. brown sugar, divided in half

½ tsp. kosher salt

1 tsp. ground ginger

For sweet fig balsamic:

1 c. balsamic vinegar

1 c. brown sugar

4 dried figs, thinly sliced

For ice cream:

Combine ½ cup of brown sugar with 1 cup Good Juju beer and reduce by half over medium-high heat, then set aside. Combine the other ½ cup of brown sugar with egg yolks in medium metal bowl, whisk until smooth, and set aside.

In a medium sauce pan, add cream, half & half, kosher salt and ground ginger and bring to a simmer over medium-high heat. Once at a simmer, shut off heat and add the Good Juju beer simple syrup.

Slowly combine cream mixture with egg mixture, whisking constantly, then set mixture aside and let cool for 1 hour until it reaches room temperature. Then add it to your basic home ice cream machine and let churn for 30-45 minutes and place the ice cream in the freezer.

For sweet fig balsamic:

Combine all ingredients in a medium sauce pan and reduce over high heat by half, then set aside and let cool. Once cool and ice cream is done, add desired amount of balsamic on top of ice cream.

Aftertaste

Inspiration for this dish comes from our upcoming beer pairing dinner with Left Hand Brewing Company. Ice cream can be surprisingly savory with the addition of ginger beer, which pairs with the sweet balsamic and figs beautifully. Enjoy.
