Mascarpone and Strawberry Short Cake

1 lb. mascarpone cheese

½ lb. strawberries, diced

½ c. sugar

2 oz. Grand Marnier

4 slices pound cake

powdered sugar for garnish

In a large bowl, mix mascarpone cheese, strawberries, sugar and half of the Grand Marnier together until smooth and creamy. Drizzle the other half of the Grand Marnier over the cake to moisten it, then spoon the filling on top of the pound cake. Sprinkle with powdered sugar and serve.


This is a refreshing dessert, and mascarpone is better than Cool Whip any day. We have run this dish as a special dessert, and also it's a great dish for anyone to bring to a potluck for dessert.
