Another go for Mexico
In the space at 16 E. Bijou St. that saw the rise and fall in recent years of both Esmeralda's Mexican Restaurant and 3 Hermanos, another independent Mexican outfit is now trying its hand. The Flow of Mexico (633-2526) has plans for a soft opening April 9, with regular service by April 12, according to manager Horacio "Flo" Flores.
Flo's father, Jose "Chelis" Luis Flores, is the owner and chef, and he brings some 30-plus years of cooking experience. Along with standards (from a huge menu) like burritos, quesadillas, combo plates, tacos and fajitas, expect some authentic, Jalisco-style seafood items such as ceviche and the Campechana ($12.99): octopus, shrimp and imitation crab in a "special broth," served with tomatoes, onions, avocado, jalapeños, cilantro and chips or crackers.

• Pita Pit reopened last week at 8 E. Bijou St. (634-1748) and will also re-open at 773 W. Garden of the Gods Road (227-7482) on April 8. Original owner Chris Murphy vows to bring both locations "back to their former glory."
• Chef Victor Matthews has moved Paragon Culinary School (paragonculinaryschool.com) from 3125 Sinton Road to 505 Popes Bluff Trail (off Garden of the Gods Road). The former Hilton hotel offers newer equipment and more space, but Matthews confirms the move relates to a rent-related legal dispute with his former landlord.
• As of May's end, Garden of the Gods Gourmet will no longer operate Café 36 (csfineartscenter.org/cafe36.asp) for the Colorado Springs Fine Arts Center. "After negotiating in good faith for the past few months, we weren't able to reach consensus on some key issues on a new deal," says FAC director of communications Charlie Snyder. The FAC will likely choose the next outfit to run Café 36 by the end of April.

• Coquette Creperie (915 Manitou Ave., Manitou Springs, coquettecreperie.com) and new chef Scott Zinolli (previously of Sonterra Grill) will expand their hours and add a new line of gluten-free French bread sandwiches as of April 15. Also, April 23 will see the first of a monthly "Immersions" wine-and-music-paired dinner series, this time focusing on France. Seats are $45 plus tip.
• As of April 15, Deb's Coffee House (2 S. 25th St.) will close. Owner Debbie Wallbaum plans to become a freelance food and beverage consultant. Her final newsletter cites fear for Old Colorado City and America, and laments that "those who have no understanding of how business works, we know, will continue to vote for Socialists."
