The power of three
"I've planned this since Day One, honestly — I just didn't plan for it to happen this early ... we're about 5½ years ahead of time."
That's Jason Yester, president of 3½-year-old Trinity Brewing Co. (1466 Garden of the Gods Road, trinitybrew.com), commenting on an expansion currently underway that will soon more than triple the brewery's production ability.
Trinity is mostly growing up toward its high ceiling rather than out, as Yester also planned in his facility design. Racks are being built inside to accommodate six new serving vessels, "basically extremely large kegs," that along with four new conical fermenters and a new, larger, combo brew vessel, will enable the company to expand its offerings.
"We'll be able to do three days of work in one day," says Yester, noting that he will move most of his old equipment into a storage area being built outside, where small-batch specialty seasonals will be made. The dining and drinking area will remain its current size, but customers will notice changes at the tap.
Yester says he'll knock off four or five guest beers (still leaving Trinity with upward of 20) to make room for more house beers. The highly limited, quick-selling and thus far only periodic Slap Your Mammy double IPA will come on tap full-time, as will a new Belgian-style pilsner. Bottle availability will also be increased, with new offerings like Le Capitan, a 12 percent ABV saison tribute to New Belgium Brewing's Peter Bouckaert, brewed with endive, Buddha's hand, grains of paradise and cacao. Also look for bottles of a new, cold house sake for the gluten-free crowd.
By summer 2012, the increased offerings should trickle into more Trinity beer being available on other local taps and in select liquor stores. This, too, is all part of Yester's grand plan, which includes yet another, greater expansion into a new (or second) site in seven years — if he's done his projections right this time.
Buffets and bagels
• In the former Red Robin location at 3680 Citadel Drive North, Royal Buffet (574-6666) plans to be open by week's end. Owner Linda Lu says it will serve more than 100 items, ranging from sushi and hibachi plates to Chinese Szechuan offerings and American steaks. Entry for all-you-can-eat will cost $6.99 at lunch and $10.99 at dinner. Lu's family continues to run two similar operations in Kansas; she recently relocated here specifically to open this site.
• Colorado Springs' fourth Einstein Bros Bagels (einsteinbros.com) will open at 30-32 N. Tejon St. on Friday, Dec. 23. To celebrate, look for a free regular coffee with any purchase during the store's first month in business.
