I’ll never forget the first time I saw a Thoreau quote about beans on a Chipotle cup. Though my initial reaction may have been shock, I’ve come to realize Thoreau and Chipotle have something in common — simplicity.
Chipotle’s founder, Steve Ells, built the chain on the idea of a “focused menu.” Ells wanted to use the best ingredients to create only two menu items, the burrito and the taco. Chipotle’s beef and pork come from free range, all-natural livestock.
