Good stuff, actually learned something about beer. It's nice to know more about beer. But you gotta know, I'm pretty conservative, kind of a benevolent redneck. So oriented, it was easy to detect underlying 'redneck' inclinations in spite of organic attempts to mask said inclinations: "slow food, conscious people and artisanal beer." Obviously large amounts of hoop cheese, consumed by "people" downing liters of fancy beer to do something about the "conscious" descriptor. My kind of folks. It's good that the owners are encouraging "human-powered arrival." Whoever delivers their kegs should consider also, that encouragement. The owners are refreshingly honest about their fare (although my only real interest is their beer). "We're trying to offer, when possible, a flavorful dish ..." said they. Will they inform clientle as to the day's "Possible" and "Not Possible" flavor quotient? Amanda is fun to read, a "triple" threat. Witty. whimsical, most importantly, she's smart. (Hmmm ... did he say "triple"?) But then, I'm a tad prejudiced (not, however, in the "redneck" sense). The next time I'm in CS, I'll make it a point to drive --I don't believe in walking-- to your brewery and engage in some beer jamming. I'll bring the little woman, she can drive me home. Good Luck! Oh...one other thing. Consider revising your bottom line. If you put "profit" first, you will probably be around long enough to do good stuff for "people" and the "planet." You seem like the kind of people who can handle profit without the pollution. Remember, "green is good." Money is not the "root of all evil," it's the "love of money" that's cancerous.
