UPDATE: Springs Cupcake Truck to occupy former OPB&J

Oops, there I go, lying again.

Due to an um ... technical error of some sort ... our Cake Crumbs blurb did not make it to print in today's paper.

So here's what should have printed today, as supplementary info to what's written below.

Coco gets a hub
Denver-located base of The Springs Cupcake Truck (, Cake Crumbs (, soon), hopes to open its second location by Feb. 21 at 3 E. Bijou St., in the former Opb&j location.
Co-owner Denon Moore says they have been eyeing a Springs expansion for the last nine months, and calls the sudden opening of the perfect-for-them space serendipitous.
“Our fans love the fact that if they miss the [Denver Cupcake] truck, they can go somewhere to get cupcakes by the same bakers,” she says, adding that Coco, the Springs truck, will stay on the road under partner Mike Bergman of the Mediterranean Cafe.

I lied.

You won't have to wait until Feb. 23's Side Dish column for more info on Cake Crumbs, as I was able to reach co-owner Denon Moore by phone this morning to get the details of her outfit's expansion into the Springs.

So we'll have a blip with the key info in tomorrow's Side Dish column, but here's some notes on everything else we discussed that I won't be able to fit into print.

As evidence that the cupcake craze remains in full swing, Moore says yesterday's Valentine's Day sales surpassed her previous record-breaker, which was Thanksgiving. In Denver alone, she sold 1,040 standard-size cupcakes and 210 mini cupcakes.

In Denver, she also sells brownies, cookies and other baked goods in addition to the cupcakes, and says she'll consider adding those items in the Springs should customers demand them. Initially, the store will open with just cupcakes and full-sized cakes for sale (not cakes by the slice).

Guests familiar with Opb&j's old layout can expect the same general arrangement, with the old prep counter (to the right as one enters) functioning now as a cupcake display on the way to the cash register.

Cake Crumbs will offer a variety of bottled drinks such as old fashioned sodas and drip coffee from Denver's Luna Roasters, as well as hot teas, hot cocoa and milk for cupcake accompaniment.

Moore says there will be free WiFi to help create a café concept where guests can hang out for a while and do some work if they wish, but she's not particularly aiming for a coffee house feel.

The shop will be open from 10 a.m. to 6 p.m., Tuesdays through Saturdays, and you can reach them at 635-9739 as of later next week. A new website,, should also be up soon.

Moore wishes to re-emphasize that Cake Crumbs bakes everything from scratch with the healthiest possible ingredients. The only artificial coloring is in optional sprinkles and the red velvet cakes; otherwise everything is made with no artificial colors or flavors.

As for how the ownership shakes out, it's somewhat complex, but not too difficult to relay: Denon and her husband Sean own the Denver bakery and truck and are partners with Mediterranean Cafe co-owner Mike Bergman on both the Springs Cupcake Truck and this new Springs Cake Crumbs location.

Lastly, I asked Moore what she though about the current cupcake craze as it's playing out locally, and if she thinks it will last. Here's her reply:

In Colorado Springs I'm shocked that we don't have very many competitors. This doesn't seem like a high risk for me. We have a huge following for our truck and I don't feel like that will fade very fast. Here in Denver we started as a cake shop and had to bring cupcakes on by demand ... and we're still selling cupcakes. We're highly sought after — we have tons of bookings for the summer already. People just love cupcakes. They make them happy, they're affordable.

I don't see the market dying yet. We know that you have to be ready for change and to diversify your product, though. We're ready for that. If cupcakes don't work [in the Springs], we won't close our doors. We're there to stay — we're in a position to diversify ... For us, social media has been a huge thing. Because that's part of our business plan, that sets us apart from others.

I called truck co-owner Mike Bergman for more information, but he's in the middle of Valentine's Day madness, and said his Denver counterparts at Cake Crumbs would of course be in the same boat all day. So we'll likely speak to them tomorrow, past this week's print deadline.

So look to my Feb. 23 Side Dish column for further details, unless I blog them here first.

One thing I can tell you, is in case that address didn't register for you: It's the old Opb&j, which abruptly closed around the new year.
