Cerberus Brewing aiming for late July opening

In my Side Dish column, we recently noted the sale of the Underground, which will let longtime owners Tom Halfast and Jerry Morris could focus efforts on opening Cerberus Brewing Company

Currently, that's on track to happen by July's end, or a little later, says brewer Joshua Adamski, formerly Brewer's Republic's GM.

In an upcoming Side Dish, we'll speak more with Adamski about his plans for Cerberus — to include 14 house beer taps and four house soda taps plus six guest taps — and his style of brewing. In a word: "hoppy." He notes 13 years experience and the recent completion of Siebel Institute's Advanced Brewing Theory Program. 

We'll also meet former Broadmoor chef Mark LeFebvre, who'll be executive chef at Cerberus, having graduated from New York's Culinary Institute of America. Of course his menu will be "beer-centric," and he'll also have an eye on local ingredients. 

Today, we took a brief tour of the construction site. Cerberus inhabits almost 4,000 square feet of what used to be an animal hospital on the ground floor and apartments on the top floor. When completed, the brewery will host a seven-barrel brew system plus a barrel aging room. Between the dining room, lounge and patio, Adamski says Cerberus can accommodate around 120 guests. 

We opted not to take photos of the mess inside for now as the guys finish up a complete overhaul. But we did snap a pic of Adamski in front of the cool new roof that will face the patio and parking area. The sloping roofline incorporates beetle-kill pine, which continues into the brewery.
