Happy Hour: Prep your palette for fall cocktails, or just toss a few back around town

The end of August in Colorado means there's a touch of fall in the air, and just like the foliage, the flavors in your cocktails will soon be changing.

It's not a time to settle for your standard well-and-whatever drink order at the bar, or at home for that matter. Back in 2015 local mixologist Adam Gasper, from the former V-Bar downtown, asked us for the chance to "show you how I plan to convert the world away from rum-and-Cokes and vodka Red Bulls, one cocktail at a time," a delivered this Vanilla-Hibiscus Apple Orchard recipe. 
On the surface it's a pretty intimidating drink to make, calling for a homemade spiced vanilla-hibiscus apple Demerara syrup and a wealth of ingredients, but after the labor comes the love, and this drink does not disappoint. Our rendition of the recipe would only call for minor tweaks, like subbing Axe and the Oak or another Springs' distiller for the Knob Creek Bourbon Whiskey (same for the local Stranahan's option mentioned), and maybe swapping the Benedictine liquor with the local favorite Decc, from Distillery 291.

Colorado Springs Dance Theatre's annual wine fest celebrates a local institution

Anything that lasts 27 years is impressive, but this long-running event proves even more so when you realize that Colorado Springs Dance Theatre itself is more than 40 years old, and has brought professional dancers and dance companies to the area for decades. Their annual wine festival is more than just a tasting opportunity for wine enthusiasts, and more than just a fundraiser for CSDT’s programming. It’s a lively celebration of dance and music in Colorado Springs. The night will feature dancers spanning styles from country swing to jazz to contemporary. There will also be live music by the Colorado Springs Youth Symphony’s String Quartet and, of course, food, wine and beer. Wineries and vendors sharing their sips include The Wine Gallery, Spring Creek Vineyard and Mountain Spirit Winery, and beer will be provided by locally beloved Bristol. Attendees can also participate in a silent auction including, among other things, an opportunity to see Hamilton in Chicago, which is reason enough to go out and support this prolific local organization.
