Sounds like a very nice combination of flavors. A must try, although I would recommend Raicilla Estancia as the add here...personal favorite.

Thanks Ari and CS Independent for the pleasant surprise with an article about my little Caribbean island, Dominica. I have lived in CSprings since the 90s and have been reading the CS Indy all this time. My reggae band here will be hosting and jammin at a Dominica benefit dance at Rasta Pasta CS on Friday, October 13. Keep up the great work. I love cocoa tea.

Fantastic recipe! Tried it in an MEC dutch oven (it's made from pure clay) and it came out excellent. This is what I did differently though: I added the chicken and once the oil and liquids started showing up, added the shallots. Didn't take the chicken out of the pot. This way I didn't have to add chicken stock, just the juices in the pot were enough. These special pure-clay pots did a fantastic job. Although I know food is much healthier and turns out more delicious when cooked in them, didn't think it would be easy to use... but to my surprise it was easier than cooking in metal pots.

Chicken broth? Butter? Wait a minute...&#$$!!! I am going to have to try this platter out for myself. As a second-generation southerner (Alabama, thank you)...I'm sitting here thinking the aforementioned ingredients are heretical, lol. Blasphemy! I can't imagine my little Alabama grandma working up that roux with those things in a million years. Looking ya up, Breakfast Club! :o)
