A Brain Freeze and More brings frozen treats and vegan options to the local food truck scene

Larry and Eva Brassill have made a cool contribution to the city's food truck scene. They opened A Brain Freeze and More on Aug. 15, offering a variety of ice cream and sandwiches. Larry's spent 25 years working the retail side of the natural grocery business, and Eva comes from medical billing. Though neither has an extensive background in food service, they decided to start A Brain Freeze because, Larry says, they were tired of their day jobs.

They planned the truck as an ice cream business, but they added sandwiches in order to stay busy over the winter. In addition to ice cream by the cone, they serve treats like sundaes and banana splits. Their signature brain freezes blend fruit juice, fruit chunks and ice, with some incorporating their ice cream.

"We call our blended ice a hailstorm, kind of as a Colorado Springs joke," says Larry. For sandwiches, in addition to meatball subs and BLTs, they've added a Tofurky and vegan cheese offering.

"A lot of food trucks out there don't have vegetarian or vegan alternatives," he says, "and being from the natural food world, that's something I have my finger on the pulse of."
