Back East empire expands with Abby’s Irish Pub 

Megan and Mike Davis, owners of all three Back East Bar & Grill spots and co-owners of Atmosphere Gastropub, have launched yet another bar and eatery in northern Springs. On Jan. 30, Abby’s Irish Pub held its grand opening, offering a mix of American sports bar bites and more traditional Irish fare.

“We have wings, and we have a BLT... but we also have a really good shepherd’s pie, bangers and mash, fish and chips,” says manager Stuart Minton. “Everyone who’s walked in the door has said they needed an Irish pub in the neighborhood.”

That food comes courtesy of chef Tom Carroll, who joins the Davises’ business empire following a 12-year career as a head chef at chain eatery Biaggi’s Ristorante Italiano. In addition to Irish eats, the spot offers the big-name Irish beers one would expect of a good Irish pub: Guinness, Smithwick’s and Harp lager. They’ve also curated a selection of whiskeys and scotches for the more spirits-centric drinker — and that includes bourbon drinkers, Minton says.

Mostly, the spot will court customers from the surrounding neighborhood, especially the nearby Cordera planned community, for which they’re the nearest nighttime watering hole. They have a bike rack and, for when the weather warms up, a dog-friendly patio. Out of sensitivity to the nearby neighborhood, for now, they’re closing around midnight, though they’re open to changing that should customer demand arise.

“This side of town chills out a little bit early, but if people come in, we can legally stay open until 2,” says Minton.

They’re targeting another demographic, too: soccer and rugby fans. When we speak, Minton says the owners are pursuing some kind of affiliation with the Colorado Springs Switchbacks Football Club, and they will be featuring as many Switchbacks games as possible on TV. Further, come World Cup season, Minton says the spot will open early in order to allow soccer fans to support their favorite teams, no matter what time zone they’re playing in.
