Best Of 2015: Burger

When Bingo Burger finally decided to expand to the Springs from Pueblo last summer, it felt like Christmas come early for fans who'd been commuting south solely for a Bingo meal. I'm partial to The Tejon, a Colorado lamb patty with goat cheese, rosemary mushrooms and lemon-rosemary aioli, but The Bingo itself — with Pueblo chilies seared inside — launched it all. There's much to be said for the focus on local sourcing and sustainability, while the gourmet toppings and dipping sauces (Thai chili ketchup, please and thanks) hint at the ownership's fine-dining past.
