Nick Baca and his family took over Bite Me Cake Company in February 2018. In addition to gorgeous custom cakes and grab-and-go baked goods (with cupcakes available by the dozen), they offer coffee — drip or cold brew, using Pueblo’s Solar Roast Coffee beans — and ice cream from Springs-based Blue Mountain Creamery, because it is indeed a small world and a smaller state. We keep things simple, getting a caramel chocolate chip cookie ($2) and a cupcake — namely, the house signature pink champagne cupcake ($2.50). The former’s packed with bits of caramel much harder than the surrounding cookie, throwing off an otherwise choice dessert option. We’re much more fond of the cupcake, which bears a little glitter in its champagne-infused frosting atop champagne-infused cake. It’s pretty as a button, with a mild champagne aroma, which translates into a hint of tartness and complexity, subtle next to the sugar — plus the cake’s nice and moist.
