Bite Me Cake Company makes tempting cupcakes and cookies

Nick Baca and his family took over Bite Me Cake Company in February 2018. In addition to gorgeous custom cakes and grab-and-go baked goods (with cupcakes available by the dozen), they offer coffee — drip or cold brew, using Pueblo’s Solar Roast Coffee beans — and ice cream from Springs-based Blue Mountain Creamery, because it is indeed a small world and a smaller state. We keep things simple, getting a caramel chocolate chip cookie ($2) and a cupcake — namely, the house signature pink champagne cupcake ($2.50). The former’s packed with bits of caramel much harder than the surrounding cookie, throwing off an otherwise choice dessert option. We’re much more fond of the cupcake, which bears a little glitter in its champagne-infused frosting atop champagne-infused cake. It’s pretty as a button, with a mild champagne aroma, which translates into a hint of tartness and complexity, subtle next to the sugar — plus the cake’s nice and moist. [location-1]
