Bite Me Sausage proves the delectable jackalope’s existence

Bite Me Sausage is a regular on the brewery circuit, with usual stops at Red Leg and Smiling Toad, but we catch them at Goat Patch one evening, where we pair our bites with an outstanding imperial cherry saison and pleasing IPA. For the uninitiated, Bite Me’s menu breaks down to choosing a brat ($7 each; gourmet varieties from Denver’s Continental Sausage), house cream cheese style, and either sauerkraut or caramelized onion garnish.

We’re drawn to unconventional flavors: a pork-beef-cheddar Mac-n-Cheese Furter (two hot-dog-sized ones on a fluffy, soft Sourdough Boulangerie bun) and a Jackalope brat, made with antelope and rabbit meat sweetened a touch by cherries (hence the beer pairing) and seriously spiced by habanero. Red chili garlic cream cheese nuances that heat a bit, and a green chili cream cheese adds accenting depth to the furters. Caraway seeds sing in the ‘kraut, and the carmies lend a touch of sweetness. We’re super happy.
