Boozy Shakes at Bingo Burger can’t be beat

It’s been five years since Bingo expanded from Pueblo, but nothing’s remained static as chef/owner Richard Warner refreshes menus periodically and always creates fun burgers and boozy shakes of the month.

We’re told the next menu refresh is coming very soon — not a complete overhaul, but expect a few new items here and there — so we try a couple things we haven’t yet sampled.

The Manitou burger isn’t made on a hemp seed bun and doesn’t really get too weird, unless fig-fennel jam strikes you as odd (it strikes me as damn delicious), but it’s great with a perfect medium-rare Colorado lamb patty, and goat cheese tang balances the sweetness.

On-special crispy Brussels sprouts bear nice char with balsamic sweetness, grilled onion bite, crumbled Parmesan nuttiness and bacon fattiness.

Lemon-rosemary aioli and chipotle ranch dips receive our crisp sweet potato fries with gusto, and we go full hedonistic mode with December’s featured shake: the lavish Gold Camp Boozy Shake, with Colorado City Creamery butter pecan ice cream, 1350 Distilling’s Blue Jacket Rum, Pueblo’s Hopscotch Bakery caramel sauce, and — because clearly that’s not enough to bring you to bliss — candied pecan garnish.

In a word: Bingo!
