According to manager Brittney Warton, the Caffeinated Cow, owned by Jake and Harmony Norment, has been slammed since its Memorial Day weekend opening. Each tub of ice cream at the shop was planned to last as long as a week, but Warton says they’re lasting only a day or two at most.

“We get it made locally in Denver at a place called Liks Ice Cream,” Warton says. She’s hard-pressed to identify a favorite — everything’s getting sold that fast, including their vegan and sorbet offerings.

“We have an apple pie and a graham cracker that are super awesome,” she says. “We have a vegan flavor that’s vanilla salty cookie that people are crazy over.”

The shop gets its name from the various coffee and ice cream drinks available: Any milkshake can hold a shot of espresso made from Barista Espresso’s Sicilian blend, and they’ll add a scoop to any cup of coffee. The shop’s most popular offering so far is the Cow-lorado, a scoop of ice cream with an espresso shot, basically an Americanized affogato. Soon they plan to add ice cream nachos to the menu, basically a sundae built on broken chips of waffle cones, which they make in-house twice a day.

Warton says that in the next month or two they plan to add a commercial kitchen for the site, set to offer yogurt parfaits, burritos, panini, muffins and more.
