Conrad's Flava Fusion makes spices pop

It can be a pleasure to introduce someone to a culinary tradition they’ve never sampled before. So when I discover my colleague hadn’t tried Jamaican food before, while we visit the 719 Hump Day Food Truck Rally, we take advantage of the opportunity to order a plate of jerk chicken and a fresh-squeezed guava lemonade.

The jerk chicken plate comes with pigeon peas and rice, fried sweet plantains, and a cooked mix of cabbage, carrots and peppers. We’re pretty well sold on the chicken, super tender and falling off the bone. Its spices pop: a lovely blend of warming allspice, fragrant garlic and chile pepper that isn’t too hot. Pigeon peas and rice do just fine as a flavor-catcher, and it’s nigh impossible to go wrong with sweet plantains.

As for that lemonade, it’s heavy on the sugar and relatively light on fruity flavors, but on a scorcher of a summer day, it drinks mighty refreshing. As a further triumph, Conrad’s — tag line “a taste of island flavors with a fusion of cultures” — succeeds in converting my colleague to Caribbean cuisine.
