I have been buying and drinking the coffee at Colorado Coffee Merchants for eight years, and as a serious coffee drinker, can assure you that they are the best coffee roasters in the City, and they make the best espresso and counter drinks in the City, too. The air-roasting method so heavily criticized in the previous post is in fact the secret to their coffee. Traditional roasting means leaves the thin, colorless shell on the roasted bean, and this shell is the source of the bitterness one tastes in traditionally roasted coffee. Air-roasting gets rid of this shell, and provides a smoother, more richly flavored coffee, whether one is drinking dark roast, medium or light. I also recommend Colorado Coffee Merchants for their wide selection of organically grown coffees, from Malawi, Tanzanian and Ethiopian, to the exotic and super expensive Blue-Mountain Jamaican, and everything in between from Sumatran to Italian to Mexican to Columbian. That CCM also has their own chef now, producing wonderful, fresh breakfast and lunch dishes, and amazing fresh pastries, makes this place all the more worthwhile. Finally, if you really do fall in love with CCM, buy one of their annual copper cups, and all your refills are free for a year. So much for the dishonest commentary above that their coffee is outrageously priced. I have gotten one of their copper cups every year for the last seven years, and what this means is that a triple-espresso fortified (three shots of espresso with one's choice of daily coffee added up to the brim)--normally a $4.75 drink at any coffee bar or kiosk in the City, costs me $.2.24 per day--a real bargain where premium coffee is concerned!
