Expanding Snooze chain worth the wait

It takes some waiting to get into the Springs location of Denver-born, hipster-retro brunch chain Snooze on a weekend. After half-hour-plus waits have skunked us in the past, we make time on a weekday to beat the crowds and chow down.

We eye a dirty drunken chai but are told it has a full shot of coffee liqueur and a full shot of rum, which isn’t exactly how a body preps for the workday. So we go for a dirty chai with Boulder, Colorado-made spicy Bhakti chai and pay an extra buck for coconut milk instead of dairy.

The chai’s punchy and full of ginger, but the espresso shot doesn’t play much of a role. For food, we go light with the sweet potato hash, a simple dish of sweet potatoes, onions and bell peppers under Tuscan kale and two eggs, which we get over easy.

Execution-wise, it doesn’t miss a trick; rich yolks marry beautifully with tender veggies. We’d love a little more of the gochujang sauce drizzled over the eggs as garnish, but Fort Collins-made Horsetooth hot sauces pick up its slack just fine.

Plus, it’s under 500 calories, if that’s your thing.
