Fat Cats Coffee & Sandwiches soft-opens under former Odyssey Gastropub chef

After four years of prep work, Fat Cats Coffee & Sandwiches has finally soft-opened in a former Farm Crest gas station. To open the spot, owners Kathy and Greg Kelley have partnered with their son David, who will act as chef. David boasts 30 years’ experience in the industry, having worked at Odyssey Gastropub and Jack Quinn’s in the past. He’s put together a menu of café fare, mainly sandwiches, wraps and salads, including vegetarian options, which will expand over the course of their soft opening. In the future, he plans to add breakfast items like French toast and breakfast burritos. The spot also boasts an in-house baker, Mary Martindell, who makes their muffins, cheesecakes, brownies and more from scratch daily.

“Since we’re using flour back there, we can’t guarantee things to be gluten-free,” says Ike Raidl, the spot’s coffee manager. He comes from construction and engineering, having helped with the build-out at Fat Cats, but he’s managed a small retail company before, he says. Fat Cats will brew locally roasted beans from High Rise Coffee Roasters, using their espresso blend for espresso drinks, with a dark French roast, a house blend and a rotating single-origin bean for drip and French press coffee.
