Grinder Sandwich Company eyes October opening

Local Mike Greenberg will be opening a spot called the Grinder Sandwich Company (656 Peterson Road) come late October.

“A grinder sandwich is an open-faced, toasted hot sandwich, lots of meat,” he explains. “It started back in the docks of Jersey and New York. These workers needed something to get them through a 16-hour day of work.” Greenberg will act as president of the business, along with co-owners Pete Esson, also CFO, and Johnny Perkins, executive chef. Greenberg says he and Perkins have 30 and 35 years in the restaurant business, respectively, with Greenberg having worked as a general manager with Las Vegas’s Feast Buffet restaurants. Most recently, Greenberg worked as a service adviser and car salesman at Perkins Motors.

In addition to signature grinders, Greenberg says they plan to offer several deli-style sandwiches and salads. They’re also planning on offering barbecue and doing monthly pig roasts.
