Hacienda Colorado still serving quality Tex-Mex

Hacienda Colorado, a Denver-based eatery has five locations, this being the sole Springs one. It’s debatable whether the Denverization we’ve recently been writing about didn’t start with Atomic Provisions, but some years ago with spots like this. Either way, we order three tacos ($15.25), picking a California fish taco, an original fish taco and a chipotle-lime chicken taco. The winner’s the original fish taco; the grilled wahoo’s seasoning blend pops savory, and it’s served with plenty of cabbage and a good garlic bite. The California fish taco’s also nice, fried cod crisp with fresh pico de gallo, pineapple and avocado for creaminess. While the chicken taco’s pleasant enough, it’s just not memorable. They’re served with black beans and rice, all fine. We also try mesquite-smoked carnitas enchiladas ($12.95), packed with nicely tender pork under a choice of sauces — we get a mellow “two-pepper” hot New Mexico Hatch green chile sauce that’s brightly flavored, paired with a full plate of rice and refried beans.
