Hops N Drops to offer cold craft beer, ice-cup cocktails and bar bites

Seattle-based chain Hops n Drops, formerly known as Hop Jack’s, has launched its first Colorado location — also its first location outside the Pacific Northwest. The 19-location chain, formed in Bonney Lake, Washington, in 2009, opened its Springs doors on Dec. 3. The spot sells a variety of “typical American-style food with a twist,” says director of development/co-owner Kevin Eggen. Expect sandwiches, burgers, salads and mac ‘n cheese, with most prices $11 to $13. The spot hosts 16 taps of Colorado-brewed beer from recognizable Colorado names Avery, Great Divide and Monument-based Pikes Peak Brewing Company, with four taps reserved for the corporation’s own beers, here contract-brewed by Left Hand Brewing Company. All beers, Eggen says, are poured at a chilly 34 degrees. They also offer accessible cocktails served in ice cups, their signature “icy drops.”
