Matthew, I was shocked when I read your review about Arabica Cafe in downtown Colorado Springs. As an avid traveler of the Middle East and an Arab myself, I can personally vouch for the quality, taste and authenticity of Arabica's dishes. As a matter of fact, I often find myself saying, This is better than the Middle East! It has been my experience, every time I visit Arabica that the owner is present, receives his customers well and provides an unparalleled display of Arab hospitality that other restaurants in the "Falafel District" lack. I would assume, like any laymen, that having been open less the 5 months, Arabica is in its infancy and I have no doubt will improve its system of serving customers if they havent already. At the same time, like most of the other successful Middle Eastern restaurants in the states, the decor comes second and the food comes first. It seems to me that based off all of Arabica's returning customers like many others and myself; the customers know what matters - the food! Matt, I would only hope that you will have the experience of traveling the Middle East and sampling the local food, then you will be qualified to critique such an amazing restaurant.
