An unassuming café and gelateria in northeastern Springs, Javalato opened in mid-February. It’s owned by Tanya Baros, whom local beverage aficionados may recognize as the owner of Old Colorado City’s superlative Yellow Mountain Tea House. Here, the Guilin, China native and her crew serve a selection of house-made gelatos, regularly rotating flavors. They also offer breakfast and lunch dishes ranging from avocado toast to Italian beef sandwiches to five spice noodle bowls. The coffee’s brewed from beans roasted at Dillanos Coffee Roasters of Sumner, Washington. We try it in a pair of decaf affogatos, one with a single scoop and one with two. The coffee itself bites with a sharp bitterness, but the gelato’s gorgeous, rich and smooth. In one, we get chocolate marshmallow, richly chocolaty but delicate and not too heavy. In the other, we get a scoop of on-the-nose salted caramel and winner of the night, banana cashew, fruity and nutty like good banana bread, great with the coffee besides.
