Just BE’s Pastries & More offers bespoke bakes

Every chef and baker has their strong suit. Brooke Harrell wants to stand out on the strength of her specialized pairings. The 22-year-old baker is the sole owner of Just BE’s Pastries & More. Before starting the business in late 2017, she says she’d been baking pretty much her whole life, and she’s earned an associate degree from Pikes Peak Community College in baking and pastry.

Currently, Harrell doesn’t have a storefront, instead doing most of her business through event orders and wholesale accounts — her baked goods can be found at The Perfect Blend Coffeehouse and she’s in something of a trial run with Switchback Coffee Roasters.

“I wanted to create special and individual pastries that would just be for a business or coffee shop or catering company,” she says, “so if I invented a recipe for someone, I would make that recipe just for them.”

In designing her bespoke baked goods, she also considers pairings. As an example, the coffee cake she’s made for Switchback uses Switchback’s own coffee in it to produce a closer unity with the product. She also offers pies, cakes, pastry pockets and a pumpkin Swiss roll, to name a few.

She’s currently baking out of the kitchen at Boz Catering at Rockrimmon Boulevard and Delmonico Drive, for whom she also does occasional bake jobs.
