Larkburger adds new items before rebrand

Larkburger, a Colorado chain that opened a Springs location in mid-2012, recently scaled back from a dozen locations around the state to eight, opting to close underperforming spots. They’re also underway with a rebranding effort — meet Lark Spot at larkspot.com — and store renovations, promising “bold new flavors.” Our location looks the same for now, and a company spokesperson tells the Indy they’ll overhaul a few other locations first, monitor those so they can “make the future renovations even better,” and by sometime around late summer cement a plan for our Springs location. While we wait, we do discover a new side item on a recent visit: truffle tots, which aren’t exactly cheap when you get a dozen scantly dressed in Parmesan flakes and truffle salt for $3.69. Napoleon Dynamite rating: ish. We at least get more sustenance out of the mainstay tuna burger that we get in a lettuce wrap. Nicely seared on the outside, the ahi steak bears a blushing pink interior and great flavor improved by Lark’s house wasabi sauce. For a light drink pairing, we nab Denver-based Renegade Brewing’s Free to Roam APA, a mid-IBU, relatively low ABV, quad-hopped pale ale with enough citrus influence to complement the fish well — in fact a later look on their website suggests grilled fish as the first food pairing to the brew (me for the win!).
