I was born on a farm in northeast Ohio. In the community I grew up in we always shared fresh grown vegetables, fruit, eggs, dairy, even pigs and chickens with neighbors and other local farms. We took care of each other and our neighborhood and community was enriched by this way of thinking, caring and relationship! This way of living has been lost and seemingly forgotten in America I am a huge supporter of Community Cafes, Kitchens and local gardens as a Social Enterprise and way of life. I believe this concept of sharing local great food around a community table can change the world we live in by impacting food insecurity and building community in our own neighborhoods! It also enhances our local economies! One of my life dreams was to live in New Orleans and I did so for 9 years! In fact I really think of NOLA as my “home”. I spent many years in the restaurant industry as an owner and multi-unit operator, opening restaurants across the country, including Olive Garden, Ground Round, Planet Hollywood and La Madeleine. I also worked for fellow Chef, Emeril Lagasse at his restaurant Delmonico in New Orleans, before hurricane Katrina, considered one of the top restaurants in the USA. In 2003, I moved to Colorado Springs from New Orleans and operated Texas T-Bone Steakhouses. I spent several years working in and leading local non-profit organizations. I have a heart for the poor, homeless and hungry, those experiencing addiction, mental illness and generally bad stuff. My philosophy and principles are simple. I borrowed and adapted them long ago from former Notre Dame Football coach Lou Holtz: “Do the right thing. Do it for the right reasons. Do your best. Treat others like you would like to be treated. Be fair.” In the last few years, I have also added, “Believe anything is possible!” When it comes to the Hospitality business, I believe that you love your guests and they will come back again and again, I love to make beautiful food! Four things I always look for when I walk into a food service operation: 1. Is it clean? 2. Is it controlled? 3. Are the guests happy? 4. Are the employees happy? Four more things I believe are necessary to make great business and are not rocket science! 1. Hot food hot! 2. Cold Food cold! 3. Great ticket times! 4. Impeccably clean environment! Personally, I believe in carrying your own weather! I like to think that life is a result of your own responses, not your conditions; you can choose your response to any condition. I was greatly affected by the words of Martin Luther King Jr. and JFK when I was a kid. Even though we may not always agree, I believe we should take care of each other! I believe in miracles! Margaret Mead said “Never doubt that a small group of thoughtful, committed people can change the world, indeed, it is the only thing that ever has. This is how I feel about Seeds Community Café and the impact it will have on our community!
