Milky’s Way food truck goes grilled cheese

We find this little trailer parked outside Red Leg Brewing Company after a friend clues us in to a Facebook post. That’s where we learn that Milky’s Way has been open since August 2018, and owner Adam Melchiori has been serving up sandwiches and sides under the umbrella of comfort food, all with the help of girlfriend/co-worker Kasia Grudzinski.

The signature Milky’s Way grilled cheese immediately catches our eye. It’s made with cheddar and pepper jack cheese, and pickled jalapeños, served with little oiliness between broad slices of French white bread from La Baguette in Old Colorado City. We pay an extra two bucks to add chicken, but the meat’s pretty dry. Skip it, or go for bacon or ham. They’re out of the former when we visit, but we do try the latter on an on-special Ham Sando, served on half of a soft, delightful La Baguette Parisian roll. Respectably thick-cut lunch meat meets provolone, guacamole, tomato slices, purple onions, mustard and mayo. We can’t taste the mustard, but it’s pretty good otherwise.
