Gregory and Kathena Miller have both been in the food business since the late ‘90s, bringing a combined total of 40 years’ hospitality experience to their new restaurant, Miller’s Café and Take Out. Both earned their aprons in The Broadmoor’s banquet department, where Gregory’s still a banquet captain. Initially, the couple were hesitant to heed friends’ insistence that they should open their own place, but when the former Trivelli’s Hoagies space became available, it was too good to pass up.
“We do a little Jamaican menu,” says Gregory. “We do the most distinct stuff... we have jerk chicken, we have oxtail, we do red snapper... we also have curry goat on the menu.” All vegetables are cooked to order, he says. For their rice and beans, they incorporate coconut milk for a creamy kick. Most of their menu is gluten-free, too, and they offer many dairy-free plates.
They’re keeping the menu small to start, though they’ll add more as demand increases. At the moment, they don’t have a liquor license, but Gregory says that’s on the horizon. Additionally they intend to offer coffee and pastry service in the mornings — Gregory says he and Kathena already spend mornings in the kitchen prepping lunch, so it’s a reasonable extension.
