Paris Crepe expands to Manitou, Denver

Wahid Hafsaoui’s been busy. In late May, his successful Springs creperie, Paris Crepe, expanded into Manitou Springs. It’s at 720 Manitou Ave., in the former PaSHa Frozen Yogurt spot on the main drag.

“We’ve always wanted to open in Manitou, we’ve just never found a location,” says Hafsaoui. It’s smaller than his downtown flagship spot, but that works out. Most of his customers come from foot traffic, and a huge fraction of his sales are to-go orders and cone crepes. That said, the Manitou creperie offers the full menu he’s established downtown, so customers can order all of their favorites, including gluten-free and vegan options. He’s also expanded Paris Crepe into Denver, partnering with Bambu, a Vietnamese-style drink and dessert chain, to sell a limited crepe menu in their location on the University of Denver campus, one of two in the city.

As for Hafsaoui’s Italian spot, Café Roma, next to the downtown Paris Crepe, it’s been closed for some time. “It was a very nice space, and it’s very nice food, but I couldn’t do it,” he says, citing high costs. He says it was still a few years out from turning a profit, and given the choice between stopping the bleeding there and expanding Paris Crepe, he went for the latter. When we speak, Hafsaoui says he’s not sure what’s going to happen with the space — maybe something in the future, but for now, he’s going to focus on crepes.
