Ches and Lisa DiDonato have been selling their lemonade and limeade at local farmers and vintage markets for nearly four years. But as of May 2, they've turned their cottage biz into a brick-and-mortar lemonade/limeade "taproom," dubbed the Pikes Peak Lemonade Company (224 N. Tejon St., pikespeaklemonade.com).

"We're the first lemonade taproom I know of," says Ches.

The couple's business started shortly after they moved from Grand Junction to the Springs in 2013. Their products start with organic lemon or lime juice, sweetened with house-made simple syrups, flavored with a variety of fruits, veggies and herbs.

"We use organic strawberries, fresh ginger, fresh jalapeños, organic basil to make our simple syrups," says Ches. They offer stevia-sweetened lemonade, with more stevia-based syrups planned. They also offer tea and shrubs — fruit-infused, sweetened cider vinegar served with club soda. They also sell lemonade and limeade concentrates for customers to mix at home.

Of note, they serve all drinks and concentrates in Mason jars.

"We're trying not to waste plastic cups and plastic straws," says Ches. "We're trying to be a little more earth-friendly," adding that customers get $1.50 off their order if they're refilling a jar they've already purchased.
