Pizzeria Rustica remains the model

Sometimes, if not often, you should just go with the wine pairing suggested on the menu. That’s the mood we’re in one snowy night at Pizzeria Rustica, when we order a glass of Antica Masseria Primitivo — Primitivo being a very close varietal to Zinfandel, with a medium-high ABV, and high tannin level that’s good for balancing rich proteins — like the capicola ham and fior di latte housemade mozzarella on our excellent Quattro Stagioni pizza. The acid, tartness and brine respectively of San Marzano tomatoes, niçoise olives and artichoke hearts also play into the full flavor harmony, finished by the earthiness of crimini mushrooms. Red pepper chile oil for dipping crust adds a final kick of heat we welcome. Pizzeria Rustica’s blend of tipo 00 Italian flour and whole wheat flour for its dough makes for a super satisfying, glutenous chew with ample airiness while retaining a thin profile. Pretty model pizza. We’re told new menu items are coming soon.
