Puff Puffette Pass provides epic ice cream

Cooper Watts launched this kick-ass ice cream truck in November 2018, following seven years of culinary work at Whole Foods then a few years managing marijuana dispensaries. Hence the stoner-(pop)culture references inherent to the truck’s branding. But it’s down to business (he holds an economics degree) when it comes to serving gai daan jai, commonly called egg, puff or bubble waffles. Their origin dates back to 1950s Hong Kong, and today they’re among the most coveted street-food treats there, sans ice cream, which Europeans and Americans added (while Australia popularized savory versions).

Mainly in the Pueblo area, but sometimes at Springs stops, Watts serves his own proprietary batter (not gluten-free, but there are vegan ice cream options) that includes custard powder and tapioca starch, which results in a joyously cartoonish waffle cone (held by a paper wrap). He sources excellent ice creams from Sweet Action (Denver) and gelato from Boulder Ice Cream, and tops them with uncommon (to us) Asian candies, like Japanese biscuit sticks (Pocky) and Thai Koala cookies, both found on my awesome, signature Harambe puffette. Yes, that’s the slain gorilla turned meme circa 2016, so this creation includes brown sugar banana ice cream, banana bits and Nilla wafers topped with chocolate syrup-drizzled whipped cream, and sprinkles (the red ones symbolizing blood; RIP!).

Also a rich delight: the tiramisu-inspired Wake N Bake, perky with Vietnamese iced coffee ice cream topped with, among other things, cannoli chips and white and milk chocolate syrups. This truck’s nothing short of a full Dopesauce McGee rating; keep Puff-ing and don’t pass.
