Both nutrition and sports-performance communities have brought bone broth into the spotlight in recent years, ascribing to it a variety of health benefits. Few places in town have capitalized on this, but Ranch Foods Direct just got in the game with a small soup station and bone broth bar. Well, I’m calling it that, but it’s more like a self-serve coffee urn where $1.99 buys you 8 ounces of the good stuff, a mix of Callicrate beef bone broth and herbaceus roasted pork pho broth, which works wonders for flavor via ginger, garlic and fish sauce inputs. A staffer tells me the new fixtures are courtesy of incoming chef Aaron Miller. An RFD newsletter notes he’s a former Dogfish Head brewer who’s also served in many kitchens. You can grab either broth from freezers too ($8.75/28 ounces) so you can add your own spin or fortify soups. I walk out with a hearty ham hock and yellow split pea soup ($4.49/16 ounces), perfect on a cold fall day.
