Red Rabbit Cafe & Ice Cream sweetens the south end

Brought to you by the folks behind Manitou’s Red Dog Coffee and Pikes Peak Chocolate and Ice Cream, Red Rabbit Cafe & Ice Cream opened in March as a fusion of those two businesses. That means an array of drinks, sandwiches, baked goods, ice cream and chocolates. Service is warm and professional, and Red Rabbit’s front patio’s a lovely linger spot.

We opt for a Southwestern breakfast sandwich ($10), which rates totally enjoyable if pricey for an Olde world jalapeño bagel layered with crisp bacon strips, egg, Pepper Jack, green chile, and pickled jalapeño coins. The cool ham and cucumber sandwich ($13.50 with a small side salad) arrives on commercial sourdough that sucks moisture from the mouth, but the cukes and cream cheese combat that a bit, and it refreshes on a hot day. Ditto for a spicy Sanctuary Chai iced latte ($4.15/medium), rich and ginger-and-cayenne-bite blissful. My pal sweats through an Ümpire Estate cappuccino ($3.65/small), well-made for darker-roast fans.
