Rocky Mountain Deli is committed to deli sandwiches

Ashley and James Hunsucker opened Rocky Mountain Deli on July 22, but they’ve been doing business in the neighborhood for a long time now. They started the spot as a Schlotzsky’s in 1988.

“Whenever you first buy a franchise, it’s a 20-year [contract],” says Ashley. They re-signed for another 10 years, but in the early 2010s, Ashley says their franchisor was not interested in re-signing the contract at that location, instead offering the Hunsuckers a new spot farther north. They declined and instead transitioned their South Nevada spot to something fully their own.

“We started our transition really heavily in these last 18 months,” says Ashley. They’ve switched to a chalkboard menu, added booths and painted the place yellow, orange and purple to evoke a Rocky Mountain sunrise. “My same staff is here, the same staff we’ve had forever and ever. Everything you loved is still here, and more.”

They’ve committed to a deli sandwich model, sourcing breads and buns from locals like Denver’s Aspen Baking Company. They’ll also offer pizzas, salads, deli-style hot dogs, house chili and soups, a $1-a-cup coffee bar and more.
