Sakura Speakeasy's balance, restraint and precision

I’m surprised to find Sakura Speakeasy quiet on a Thursday. Rooster’s House of Ramen has customers, but once the hostess guides me to the hidden Speakeasy entrance, it’s just me and barman Dylan Currier (who, disclosure, knows me) in the cozy space. We talk shop as he pours my free welcome cocktail, a palate-awakening mix of Lee Spirits lavender gin, plum wine and yuzu, floral and dry but by no means perfume-like.

I’m in for two drinks; Currier recommends menu favorite Cucumber Crush ($10), an all-too-drinkable mix of shochu (Japanese rice liquor), honeydew, yuzu and cucumber, finished with sparkling sake. It’s a summer drink, but Currier says there’ll be mutiny if it leaves the menu for fall. The Paper Crane ($11) pairs delicate Nikka Coffey grain whisky and yuzu with Aperol and amaro, for a delicate neat drink with bitter, floral notes. Everything shows balance, restraint and precision, just a little different from most local menus.
