Another Amanda's

In May 2011, when we wrote about Amanda's Fonda (3625 W. Colorado Ave., amandasfonda.com) being purchased by Rick Holland (owner of several Wendy's, Golden Corrals and Colorado and Nevada casinos), we mentioned the possibility of local expansion.

According to Mark Austin, vice president of real estate and development for the company, those plans are now coming to fruition. A second location is tentatively set to open around the Christmas holiday at 8050 N. Academy Blvd., a former Village Inn space.

The same menu will transfer, but this new spot will be much larger than the original: 6,500 square feet of interior space, plus another 1,500 square feet on the patio. Austin says Holland and company are excited to create local jobs, and are already scouting for a third location either locally or in Denver.

Puffy and pink

As if its name didn't set it apart enough, Sancho's Mexican Grub (5046 N. Academy Blvd., 964-3702) sells both puffy tacos (with semi-hard, deep-fried shells) and pink tacos (custom-made locally, with 20 cents for each one sold going to fight breast cancer).

Owner Steve Bustamante, whose family operated La Paloma on Colorado Avenue in the '70s and '80s, says he wanted to make Sancho's "something franchise-able and fun," but also as good as iconic East Los Angeles shops. The former Bikini Xpresso location offers drive-through and takeout service, plus a small outdoor seating area.

Bustamante emphasizes his true Colorado style with ample green chile across the menu; he says that after only two months in business, his mother, sister and he are rolling around 200 breakfast burritos each morning to meet demand. Check the Sancho's Facebook page for daily specials under $6.

Moving and moved

• Observant passersby may have noticed the closure of Firehouse BBQ (447-8829) at 817 W. Colorado Ave., back in August. But manager Julie Johnson says the business isn't dead; it's moving. She hopes to be open as early as Nov. 1 at 6995 Lexington Drive in the former Hub Car Wash & Diner space.

Johnson notes that it's a much larger space (5,200 square feet versus 3,100), and that guests should expect more specials on an updated menu, though the focal meats and sauces won't change. The separate spin-off business, Fire House On the Run BBQ (12480 Black Forest Road, firehouseontherun.com) remains open with no changes.

• Making good on its mission to settle down, the former mobile coffee unit Morning Glory Espresso (morninggloryespresso.biz) has found a home in Widefield at 101 Fontaine Blvd. The location features a drive-through and serves Colorado Coffee Merchants products, plus newly added pastries from Bliss Bakery & Kitchen and donuts from Woodland Park's Donut Mill.
