The Perfect Blend Coffeehouse blends Mission beans with house syrups

Stephanie Polenz and husband Bradley were preparing to move to Tennessee in 2017 when divine inspiration struck. She had a strong feeling that they were supposed to leave Dallas-Fort Worth for Colorado Springs, not Tennessee. They listened to that intuition, and Stephanie says it’s one of the best decisions they’ve ever made. She now owns The Perfect Blend Coffeehouse, tucked away on a side street near East Library.

In 2011, Stephanie took a job at a Starbucks with the intent of learning all she could about the coffee industry, from beans to business acumen. Four years later, she left for a job at a local shop, Iris Bagel & Coffee House of Arlington, Texas, where her love for small, community-centric coffeehouses bloomed.

Stephanie opened The Perfect Blend at the end of July 2018, and so far she’s found success pouring Mission Coffee Roasters coffee.

“The taste of their beans is… super mellow and balanced,” she says. To enhance the coffee, she makes all of her own syrups and sauces from scratch. That means the toffee nut syrup in her signature Toffee Moxie Mocha has no artificial flavors or preservatives, aside from those in the broken-up Heath bar crumbled atop. They also sell a true-to-Texas sweet tea, made from Bradley’s family recipe, which she says has delighted her fellow ex-Texans. She sources all of her baked goods from Just BE’s Pastries & More.

“Her gluten-free stuff is incredible.”
