The Pop eyes expansion on strength of drive-through soda concoctions

Beverage kiosk The Pop opened in September 2017, has us intrigued at first glance. The menu’s anchored around signature drinks that blend soda, energy drinks and sports drinks with various Monin syrups and fruit purées. The spot’s owned by couple Bryce Meehan and Stephanie Schofield, plus Schofield’s parents, Curt and Lisa. The Schofields are responsible for the concept — Meehan says the couple had memorable experiences at similar specialty soda shops in Utah and Arizona. Meehan and Schofield, who run the day-to-day operations, are from Los Angeles, where Meehan was in the restaurant business and Schofield the coffee business.

“We kind of thought we’d combine our interests,” says Meehan. He and Stephanie decided to move to the Springs to open up shop — Meehan cites family in the area and what he describes as the Springs’ reputation as a spot for emerging foodies.

In addition to their signature drinks, The Pop sells coffee drinks and homemade cookies. Their espresso beans come from Australian company Vittoria Coffee. For drip coffee, they’re alternating between Story Coffee Company’s Palmer blend and single-origin Ethiopian beans, and they’re mixing the two for their cold brew.

Long-term, Meehan says they hope to open more locations.

“We’ve got a couple of different sites,” he says, “but currently, we’re waiting to see how the summer plays out.”
